LEMONY SWEET RICE 
2 c. rice
1 qt. milk
2 c. sugar
1 pinch salt
6 eggs
1 stick butter
1 lemon (rind only)
1 qt. water
Cinnamon (garnish)

Boil rice in 1-quart water with lemon rind, salt, and butter. When rice is beginning to become dry, add 1 quart milk, a little at a time, as well as the sugar. Stir continuously.

When rice is cooked, remove from heat. Beat eggs and stir into slightly cooled rice. Stir vigorously. Return to stove and bring to a boil for 2 minutes. Remove lemon rind.

Pour into platters and garnish with cinnamon.
