GREEN APPLE CURRIED CHICKEN
SALAD
 
2 lg. green apples
2 tbsp. lemon juice
3 1/2 c. cooked. cubed chicken
1 1/2 c. cooked rice
1 c. mayonnaise
1/2 c. slivered almonds
1 tbsp. chopped onion
3 tsp. curry powder
1 1/4 tsp. salt
1/8 tsp. black pepper
Crisp salad greens
2 limes, cut into wedges
Chutney

Core and dice apples, add lime or lemon juice. Stir in chicken and rice. Blend mayonnaise, almonds, onion, curry powder and salt. Stir into apple mixture. Chill. Mound salad on greens. Sprinkle with curry powder. Garnish with lime and chutney. Carry in cooler to picnic. 6 to 8 servings.
