STUFFED SWEET POTATOES AND
CRUSHED PINEAPPLE
 
3 lb. sweet potatoes
1 sm. can crushed pineapple
1/2 c. brown sugar
2 tbsp. butter
1 c. bread crumbs
1 tsp. salt

Peel sweet potatoes, cook until soft. Drain and mash. Flavor with butter, let it cool. Drain the pineapple. Take about 2 tablespoons of the sweet potato. Make it flat with your hands and stuff with the crushed pineapple. Close it to cook like a whole potato, dip in brown sugar and bread crumbs. Bake in a greased pan at 350 degrees for 30 minutes.
