"REAL MAN'S" QUICHE | |
1 1/2 (10 oz.) pkgs. Swiss cheese, grated 1 deep dish frozen pie crust 1 med. onion, chopped 3 eggs 1 (8 oz.) pkg. spinach, chopped and stemmed 1 c. plain yogurt or sour cream 1 (8 oz.) pkg. mushrooms, chopped 1/2 tsp. nutmeg 1 tsp. butter Prepare veggies: In a large skillet, saute onion in butter until transparent. Add chopped mushrooms and spinach. Simmer for 5 minutes. Prepare custard: In a bowl, combine eggs, yogurt, and nutmeg. Blend until smooth. Prepare crust: With fork, pierce bottom and sides of crust. Preheat in 350 degree oven for 5 minutes. Line bottom of crust with about 1/3 of the grated cheese. Add vegetables, then pour custard mixture over veggies. Top with remainder of cheese. Bake at 475 degrees for 10 minutes, then at 350 degrees for 20 to 25 minutes. |
