ST. ANDREW'S DAY HOT POT | |
1 lb. lean beef or lamb, cubed 3 tbsp. flour Salt & pepper to taste 2 tbsp. oil 8 oz. sausage links, cut in half 1 med. onion, peeled & sliced 2 med. potatoes, peeled & sliced (2 to 3 c.) 2 med. apples, peeled, cored, sliced (1 to 2 c.) 2 c. beef stock Preheat oven to 350 degrees. Dredge beef with flour, salt, and pepper. Heat oil in a large skillet; add beef and brown it. Remove beef and toss with sausage. Add onion to skillet. Sprinkle it with sugar and stir until it is lightly browned. Toss potatoes and apples together, add onion. Spread half the potato mixture in the bottom of a 2 quart casserole, top with half the meat, repeat. Heat beef stock in skillet, loosening particles, pour stock over meat. Cover casserole. Bake 1 1/2 hours at 350 degrees. Serves 4. |
