ROAST DUCKLING WITH LEMON GLAZE 
2 ducklings (4-5 lbs. each)
1/2 tsp. salt
Freshly ground black pepper
1/2 c. honey
1/4 c. lemon juice
1 lemon

Rub cavity of ducklings with salt and pepper; skewer the cavities and truss the birds with soft cord.
