ROASTED NEW POTATOES WITH LEMON
AND THYME
 
3 lbs. sm. new potatoes
Salt and pepper
1/2 stick unsalted butter
1/4 c. olive oil
6 tbsp. fresh lemon juice
2 tsp. thyme
1 tbsp. grated lemon peel
3 tbsp. fresh parsley

Preheat oven to 375 degrees. Quarter the unpeeled potatoes. Butter a roasting pan or similar pan. Add potatoes. Generously salt and pepper. Heat butter and oil together until butter is melted. Add juice.

Pour over potatoes and toss to cover potatoes. Sprinkle thyme over potatoes. Bake 45 minutes to an hour (test for doneness). Sprinkle lemon peel over potatoes and bake 10 minutes.
