ROASTED SALMON WITH LEMON THYME
CRUST
 
FOR THE CRUST:

1/2 c. fresh Italian parsley, chopped
1/4 c. freshly Parmesan cheese, grated
1/4 c. fresh lemon thyme
:
1 (4 lb.) fresh salmon filet
2 tsp. grated lemon peel
1/2 tsp. salt
3 garlic cloves
2 c. fresh bread crumbs
4 tbsp. unsalted butter, melted

Place the first six ingredients for the crust into a food processor which has been fitted with the steel blade. Process mixture until fine. Transfer to a bowl. Add bread crumbs and melted butter and mix well.

Grease a shallow baking dish and place salmon, skin side down, into the dish. Brush the salmon with melted butter, and cover with the bread crumb mixture. If mixture has been refrigerated ahead of time, bring it to room temperature before using. Roast the fish for about 25 minutes at 350 degrees.

Serves 8.

Great recipe... Converts well to a small/quick portion. I was rushing with only a 1 lb. filet, so I used Italian seasoning mix 1/4 (McCormick) to replace items 1 and 3 and minced garlic to replace fresh cloves. Plain panko breadcrumbs from Ians replaced the fresh breadcrumbs. I cut everything else by 25% and was left with a very nice result. Thank you.
