BUTTERMILK COCONUT PIE | |
1 1/4 c. sugar 1/2 c. butter, melted 1/2 c. cultured buttermilk 2 tbsp. all-purpose flour, not self-rising 3 eggs, beaten 1 tsp. vanilla 1 can (3 1/2 oz.) flaked coconut, divided 1 unbaked 9" crust Combine sugar and flour in a large bowl. Add melted butter, eggs, buttermilk, vanilla and 2/3 of coconut. Mix well. Pour into pie shell (crust). Sprinkle with remaining coconut. Bake at 325 degrees for 1 hour and 5 minutes or until set. |
