GIANT STUFFED HAMBURGERS
2 lbs. ground round or extra lean ground beef
3/4 c. herb seasoned stuffing mix
2 tbsp. beef broth or water
1 1/4 c. shredded sharp Cheddar cheese
1/4 c. chopped parsley
Salt and pepper to taste
1/4 c. bottled barbecue sauce
Lettuce, tomato (garnish)

On a wooden board, gently press 1 pound of the beef into a flat 8 1/2 inch circle with a 1/2 inch high rim around the edge. In a small bowl, combine stuffing mix with beef broth. Add cheese and parsley; mix well. Put cheese mixture on top of beef. Pat out to the rim. Flatten remaining meat into an 8 inch circle. Place on top of cheese mixture; press and pinch edges firmly together. With two pancake turners, lift hamburger from board to broiler pan rack. Season with salt and pepper. Broil 5 inches from heat for 15 minutes; turn. Season again and broil 10 minutes longer.

Baste with barbecue sauce, if desired. Broil 5 minutes more, if desired. Remove to large serving plate. Garnish; serve.

If grilled out doors, wrap in double thick foil.
