FUNNEL CAKES 
3 eggs
1/4 c. sugar
2 c. milk
1/2 tsp. salt
2 tsp. baking powder
3 c. flour
1 tsp. vanilla

Mix eggs and sugar well. Add remaining ingredients and mix well. Squeeze mixture through small tube into hot oil to deep fry. Cook until golden brown. Drain on paper towels. Sprinkle with confectioners' sugar.

NOTE: This makes a very large amount. May want to cut in half.
