BROCCOLI CORNBREAD 
1/2 c. melted butter
1/3 c. chopped onion
3/4 c. cottage cheese
10 oz. pkg. chopped frozen broccoli, drained
4 large eggs, slightly beaten
8 1/2 oz. pkg. quick corn muffin mix
1 tsp. salt (I do not use it)

Combine all ingredients except muffin mix; blend well. Stir in muffin mix just until moistened. Pour into greased (I spray with Pam) 13 x 9 x 2-inch baking pan.

Bake 20 to 25 minutes at 400°F.
