LIVER & MACARONI CASSEROLE | |
1 lb. diced liver 1/4 c. shortening 1/2 c. onion, or more 1 clove garlic, chopped 8 oz. mushrooms 1 (No. 2) can tomatoes 1 (6 oz.) can tomato paste 2 tsp. salt 1 tsp. brown sugar 8 oz. macaroni 3/4 c. grated cheese Brown liver, onions, garlic and mushrooms in shortening. Add tomatoes, tomato paste, salt and brown sugar, simmer a few minutes. Cook macaroni in salted water until tender. Put in a greased baking dish. Pour liver mixture over macaroni. Sprinkle with cheese. Bake at 350 degrees for 25 to 30 minutes. A good way to get the kids to eat liver if they don't know. |
