FRIED CHICKEN 
3-5 lb. mixed chicken pieces or whole chickens
3 eggs
2 pkg. Saltines
48 oz. bottle Wesson oil, approximately
Lawry's or Schilling's seasoned salt
Pepper

Heat oil to 375 degrees in deep fryer 1/2 full. Wash, skin and cut chicken into pieces and dry them. Salt with seasoned salt and pepper. Beat 3 eggs until foamy. Put cracker in food processor blender or hand crush until they look like dust.

Dip chicken in eggs, then roll or shake in bag of cracker crumb dust until fully coated. Put 5-6 pieces of chicken at a time 15-20 minutes until dark golden and crispy. Let drain on wire rack 5-10 minutes. You can keep warm in warm oven until all are cooked.
