MANDARIN PORK CHOPS 
6 pork chops, cut 3/4 to 1-inch thick
2/3 c. orange marmalade
1/4 c. soy sauce
1 clove garlic, crushed
1/2 tsp. ginger
1 (11 oz.) can mandarin oranges, drained
2 tbsp. cornstarch
1/4 c. water

Place chops in glass dish. Combine marmalade, soy sauce, garlic and ginger and pour over chops. Cover and marinate in refrigerator 4 hours, turning occasionally.

Place pork chops and marinade in large frying pan. Cover and cook slowly 45 to 60 minutes, turn chops occasionally. Add orange mandarin segments to chops, cover and cook 5 minutes more. Remove chops and fruit to a hot platter. Blend cornstarch with water, add to pan liquid and cook until thickened. Serve sauce with chops.

Serves 6.
