OATMEAL ORANGE BREAD OR MUFFINS 
2 c. flour
3/4 c. sugar
4 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 c. rolled oats
1 orange, rind and sections
2 eggs, beaten
2 tbsp. melted butter
1 c. water

Stir together flour, sugar, baking powder, soda and oatmeal. Set aside. Mix 1 tablespoon additional sugar with grated orange rind and diced sections. Set aside. Combine beaten eggs with butter, orange mixture and water. Combine with dry ingredients; stir to blend. Pour into a 1 1/2 quart greased casserole, 9 inch greased loaf pan or greased muffin tins.

Bake at 350 degrees for casserole or loaf 45 to 55 minutes; 30 minutes for muffins.
