PINEAPPLE DROP COOKIES 
3/4 c. shortening
1 tsp. salt
1 tsp. vanilla
1 c. brown sugar, firmly packed
1 egg, well beaten
2 1/2 tsp. baking powder
1 c. crushed pineapple, undrained
2 c. flour
1 c. rolled oats
1 c. chopped nuts

Combine shortening, salt and vanilla using high speed of electric mixer. Add sugar gradually and cream well. Reset mixer to low speed. Add egg and mix well, then the flour and baking powder which has been sifted together, alternately with the pineapple. Mix well after each addition. Add rolled oats and nuts slowly, mixing them in well.

Drop from a tablespoon onto a greased baking sheet. Bake at 350 degrees for 15- 18 minutes.
