BANANA COFFEE BREAD 
1/2 c. shortening
1 c. sugar
2 eggs
3/4 c. mashed ripe bananas
1 1/4 c. sifted all purpose flour
3/4 tsp. baking soda
1/2 tsp. salt

Cream shortening and sugar until fluffy. Add eggs, one at a time, beating well after each. Stir in banana. Sift together dry ingredients; add to banana mixture; mix well. Pour into greased 9 x 9 x 2 inch pan. Bake at 350 degrees for 30 to 35 minutes. I use 2 ripe bananas and add 1 cup walnuts.
