CHEESE GRITS 
3 c. boiling water
1/2 lb. sharp Cheddar cheese
1 1/2 tsp. seasoned salt
2 eggs, well beaten
3/4 c. hominy grits
3/4 stick butter
5 to 6 drops Tabasco sauce

Combine hominy grits with boiling water and cook 3 to 5 minutes, stirring occasionally, until thickened. Stir in cheese. Add rest of ingredients. Turn into buttered casserole dish. Bake at 350, uncovered, 45 to 60 minutes. Can be prepared and refrigerated a day ahead of time. Bake at serving time.
