CHEESE GRITS 
3 c. boiling water
3/4 c. regular hominy grits
1/2 lb. sharp cheese, grated
3/4 stick butter
2 eggs, well beaten
Garlic
1 tsp. salt
3 drops hot sauce

Add grits slowly to boiling water, cook 5 minutes. Stir in cheese and butter; let cool. Fold in eggs. Add salt and hot sauce. Pour into 1 quart baking dish. Sprinkle with paprika. Refrigerate overnight. Bake 1 1/2 hours at 350 degrees.
