CREAM OF BROCCOLI SOUP 
20 oz. broccoli
1/4 c. sliced onion
1/2 tsp. salt
2 c. milk
2 c. chicken broth
3 tbsp. butter
3 tbsp. flour

In a medium saucepan cook vegetables and seasonings in chicken broth until done. Puree in blender or processor. Set aside.

Melt butter. With wire whisk, stir in flour and cook, stirring constantly, until smooth and bubbly. Slowly blend in milk. Bring just to a boil, stirring frequently with whisk. Stir in pureed vegetable mixture; heat through. Garnish with sour cream if desired.
