TURKEY CORDON BLEU 
1 1/2 lbs. turkey breast cutlets
1 (8 oz.) pkg. Swiss cheese
1 egg
3 tbsp. butter, divided
Bread crumbs

Beat 1 egg in bowl. Spread bread crumbs on waxed paper. Dip cutlets in egg and then in bread crumbs, to coat completely. Melt 2 tablespoons butter in large skillet. Saute cutlets until golden. Add 1 tablespoon butter. Turn cutlets and saute until golden. Arrange cheese on top of cutlets. Serves 6.
