HENS IN A BASKET
2 Cornish Game Hens, halved 1 c. uncooked Minute Rice 1 c. milk 1 (10 3/4 oz.) can cream of mushroom soup 1 pkg. dry onion soup mix 1 pkg. chicken stuffing mix Make stuffing mix according to directions. Set aside. Combine rice, milk, soup mix and can of soup in bottom of large baking dish. Lay Cornish hens (halved) on mixture. Bake at 350 degrees for about 1 1/2 hours (check on hens after 1 hour). Place prepared stuffing around hens for last 20 minutes to 1/2 hour of baking. Serves 4.

I first got this recipe years ago in a booklet included with a 2 pack of game hens. I've fixed it may times over the years and it's always quick (prep that is), easy and delicious.

One think I do is add the stuffing in the beginning and let it cook for the full time. Comes out fine.
