QUICK AND WONDERFUL ORANGE
CHICKEN
 
1 chicken, cut up into 8ths with or without skins
Onion powder
Garlic powder
Salt & pepper to taste
1 sm. jar orange marmalade or all fruit

Remove skin from breast and thighs. Place all chicken bone side down in baking pan. Sprinkle with onion powder, garlic powder, salt and pepper to taste.

In small bowl empty jar of marmalade. Mix with spoon. This allows it to spread more easily. Spread over chicken 1/2 to full jar of marmalade. Bake uncovered in 350 degree oven for 1 hour (be sure all chicken parts are covered with marmalade). The chicken will make its own "juice" in the pan. Remove from oven. Serve at once with seasoned rice (salt, pepper and sauteed onions) and your favorite vegetable or salad.

Variation: Prepare as above. Substitute cherry preserves for marmalade. Use the same seasonings.
