FRENCH FRY BAKE 
3/4 c. chopped green peppers
3/4 c. chopped celery
1/3 c. butter
1/3 c. flour
1/2 tsp. salt
1/8 tsp. pepper
3 c. milk
3/4 c. shredded American cheese
3/4 c. shredded carrots
1/3 c. chopped pimento
1 (32 oz.) pkg. frozen French fried potatoes

In a large saucepan, saute green pepper and celery in butter until tender, but not brown. Stir in flour, salt, and pepper. Add milk, all at once. Cook and stir until bubbly. Cook and stir 1 minute more. Add half the cheese, the carrots, and pimento, stirring until cheese is melted. In a 13 x 9 x 2 inch baking dish, combine the potatoes and cheese sauce. Bake in a 375 degree oven for 30 minutes. Sprinkle remaining cheese on top; bake 5 minutes more. Garnish with additional green pepper, chopped if desired. Serves 12. (You may half this recipe.)
