STUFFED MEAT LOAF WITH MUSHROOM
SAUCE
 
2 lbs. ground beef chuck
1 med. size red onion
1 tsp. ground white pepper
3 whole eggs
2 whole garlic
3 roasted and seeded red pepper
1 1/2 c. cooked green beans
1 1/2 c. milk
1 tsp. ground black pepper
2 tsp. salt
6 hard cooked whole eggs
3/4 lb. sliced cooked ham
1 c. bread crumbs

Put meat in bowl; add milk, salt, pepper, 3 whole eggs, fine chopped onion and garlic and bread crumbs; mix them. Divide mix in two portions. Cut two pieces of aluminum foil and spread each portion over aluminum foil. Put ham slices over mix, green beans, hard cooked eggs and red pepper and roll it.

MUSHROOM SAUCE:

2 c. beef stock
3 tsp. cornstarch
1/2 tsp. ground white pepper
2 c. sliced fresh mushrooms
2 oz. clarified butter
1 tsp. beef base
1 tsp. salt
1 oz. Kitchen Bouquet sauce
1/2 c. dry white wine
1/4 c. water
