STUFFED MEAT ROLL WITH MUSHROOM
SAUCE
 
4 tbsp. butter
2 tbsp. onion
4 c. soft bread crumbs
1/2 c. finely chopped celery
2 tbsp. parsley
1 tsp. salt
1 lb. ground beef
1/4 c. milk
1 can mushroom soup
1 tsp. pepper

Melt butter, add onion, cook until tender but not brown. Add bread crumbs, celery, parsley and half of salt and pepper. Mix lightly and reserve. Combine meat, milk and remaining salt and pepper. mix well and add 1 cup of stuffing. Put wax paper on bread board and meat mixture on paper. Flour rolling pin and roll meat into rectangle 9 x 11 inches. Spread remaining stuffing on meat and roll up. Place in shallow pan and bake in moderate oven (350 degrees) for 45 minutes. Heat 1 can of mushroom soup and pour over meat to serve. Serves 6 to 8.
