STUFFED TROUT 
3 to 5 lb. trout with head on
2 c. stuffing
2 tbsp. butter

Open cavity, clean and rub with salt. Stuff fish with your choice of stuffing and skewer closed. Put in deep baking pan with butter. Heat oven to 350 to 375 degrees and bake about 8 to 10 minutes per pound. If you like, you can add 1 cup white wine for basting. Cooking time may vary with different fish, so check occasionally with fork. If fish flakes and fork goes in and out easily, it's done.
