CINNAMON OAT BRAN MUFFINS 
1 3/4 c. skim milk
1 1/2 c. uncooked oat bran
1/4 c. egg substitute
1/4 c. firmly packed brown sugar
1 to 1 1/2 tsp. cinnamon
4 tsp. corn oil
1 c. all-purpose flour
2 tsp. baking powder

Preheat oven to 400 degrees. Place paper liners in medium muffin tins. In medium bowl, combine milk and oat bran. Add egg substitute, brown sugar, cinnamon and oil. Mix well.

Add combined flour and baking powder to coat bran mixture, mixing just until dry ingredients are moistened. Fill prepared muffin cups 2/3 full. Bake about 20 minutes or until light golden brown at 350 degrees.
