1 c. sugar 3/4 c. shortening 2 eggs 1/2 tsp. vanilla 1/2 tsp. almond (if desired) 1/2 c. milk 3 tsp. baking powder 1/2 tsp. baking soda 3-4 c. flour Pie filling Preheat oven to 375 degrees. Cream sugar and shortening, add eggs, flavoring and milk. Stir in 3 cups flour, baking powder and soda. Add extra flour as needed to make cookie dough soft, but not too sticky. Can refrigerate for 1/2 hour or work immediately. Flour your work surface. Roll out cookie dough about 1/8-1/4 inch thick, use cookie cutter for shaped cookies or round biscuit cutter for plain cookies. Place one cookie on cookie sheet, put heaping teaspoon of pie filling in center, cover with second cookie in pie fashion and press down edges. (Top cookie dough should have a hole cut in the center prior to covering filling). |
