POTATO SOUP 
6 to 8 potatoes
2 to 3 tbsp. fresh parsley, minced
1 onion, chopped
1 stick butter
2 c. ham, diced
1 c. milk
Salt (to taste)
Pepper (to taste)
Instant mashed potatoes (to thicken)

Peel potatoes and onion; chop into 1/2 to 3/4-inch cubes. Cover with water; boil in kettle with other ingredients until potatoes and onions are tender. Add instant mashed potatoes.
