MONTEREY ZUCCHINI 
6 med. zucchini (about 7 inches)
1/2 c. bread crumbs, or cracker crumbs
1 c. grated Parmesan cheese
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. oregano leaves, crushed
1/4 tsp. garlic powder
1/4 c. butter
1/2 c. grated yellow cheese

1. Scrub zucchini, cut off ends and slice into 1/3 inch slices. Boil in water (add 1/4 teaspoon salt to water) until tender. Drain.

2. In large bowl add zucchini. Mash coarsely with fork. Add bread crumbs, Parmesan cheese, salt, pepper, oregano and garlic powder. Pour butter r butter over mixture and mix well.

3. Pour mixture into casserole dish-microwave dish. Sprinkle with yellow grated cheese. Cook in oven at 350 degrees until bubbly in center. Cook in microwave for 10 to 15 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
