LAND O'PLEASANT LIVIN' CHICKEN | |
1 lb. crabmeat 1 (7 oz.) jar Old English cheese spread 1 (4 oz.) jar Cheez Whiz 4 tbsp. mayonnaise 1 tbsp. garlic salt 1 tsp. Old Bay seafood seasoning 8 boned chicken breasts 8 oz. stale beer (no foam) Mix first 6 ingredients to make stuffing. Cut pockets in chicken by cutting from edge where bone was removed, but not all the way through, to enlarge the cavity. Now do the same on the opposite side. Fill cavities generously with stuffing and fasten with skewer. To bake in oven, place in pan with plenty of room, pour beer over all and bake 370 degrees for 45-60 minutes. To bake in crock pot, wrap each in aluminum foil, pour a little beer (1 oz.) and seal as sandwich wrap. Place in crock pot so liquid will not run out, stacking as necessary and bake on slow for about 6 hours. Serves 8 generously. |
