CONFETTI POTATOES 
6 lg. Irish potatoes
1 green bell pepper
1 sm. jar pimento
1 c. sweet milk
1 stick butter
1 roll jalapeno cheese
1 roll garlic cheese
1 tbsp. flour
3/4 tsp. salt
3/4 tsp. black pepper

Boil potatoes in skins. Cool. Peel and slice. Sliver bell pepper. Make a sauce using butter, flour, milk, and cheeses. Add salt and pepper.

Layer potatoes in casserole with bell pepper and pimento. Sprinkle each layer with salt and pepper. Pour cheese sauce over the potatoes and bake at 350 degrees. May be prepared ahead and frozen. Serves 10 to 12.
