SWEET POTATO BISCUITS 
2 1/2 c. buttermilk baking mix (Bisquick)
1/3 c. softened butter
1 c. cooked, mashed sweet potatoes
1/2 c. milk

Mix all ingredients until soft dough forms. Turn onto waxed paper dusted with flour or baking mix. Roll in flour to coat. Shape into ball, then knead 3 or 4 times. Roll 1/2" thick. Cut with 2" cutter, dipped in flour. Place biscuits with edges touching on ungreased cookie sheet. Bake 10 to 12 minutes or until golden brown. Makes 18 to 20 biscuits.
