STUFFED PORK CHOPS 
2 tbsp. butter
6 (2-inch thick) pork chops with pockets cut in side
1/2 c. chopped apples
2 tbsp. raisins
3/4 c. cider
2 tbsp. minced onion
1/4 c. chopped celery
1/4 tsp. salt
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1/4 tsp. paprika
1/4 tsp. poultry seasoning
1 tbsp. parsley, minced
2 c. day-old bread cubes
1 egg beaten

Preheat oven to 350 degrees. In a large skillet, melt butter; add pork chops and brown on both sides. Remove from skillet. In a separate bowl combine apples, raisins, cider, or apple juice and lemon juice. Lightly brown onion; stir into apple mixture. Add all remaining ingredients to apple mixture and mix well.

Stuff pork cops. Place stuffed chops in a 13 x 9 baking pan. Pour apple-glaze over chops. Cook covered for 30 minutes, then remove cover and continue to bake for another 25 minutes.
