HALIBUT SUPREME 
4 (7 oz.) halibut fillets
3 tbsp. mayonnaise
3 tbsp. butter
1 c. chopped green onions
Salt
Pepper
1 c. Parmesan cheese
1 tsp. Dijon mustard

Place halibut on broiler pan and salt and pepper to taste. Broil on high for 15 minutes. Remove from broiler when fish flakes. Mix above ingredients and spread generously on top of halibut. Return to broiler for about 10 minutes or until ingredients bubble and brown.

This is now my second all-time favorite halibut dish after beer battered. It is delicious and my whole family enjoyed it too. Just be careful to not overcook the fish. It would taste great on salmon too decrease mayo and increase dijon. Yummy!

I have to give this recipe 5 stars. Tasty, kept the fish nice and moist. You would think that the recipe contains too much cheese, but no, it was delicious with this fish. I will use it on other fish as well.

P.S. I want to add that I cut this recipe down to 2 servings with no problems.
