GREAT AUNT THERESA'S SPECIAL
JELLO SALAD
 
1 c. fine grated sharp cheese
1 pkg. lemon Jello
1 tsp. (rounded) unflavored gelatin, dissolved in a little water
1 (15 oz.) can crushed pineapple in natural juice, unsweetened (reserve 1/3 c. juice for topping)
3 med. ripe bananas, if sm., use 4

Grate cheese in bottom of 9" square pan. Dissolve Jello in 1 1/2 cups very hot water. Add dissolved gelatin (stove method) to gelatin. Add left over pineapple juice to this mix. Place in refrigerator until egg white consistency. Remove from refrigerator. Spoon a little of Jello to cheese to set it. Put in refrigerator. Add sliced bananas and pineapple to Jello mix. Take pan with cheese from refrigerator. Spoon banana/pineapple mix on top. Return to refrigerator.

TOPPING:

1/3 c. pineapple juice
2 egg yolks
1/4 c. sugar
1 tbsp. lemon juice
