HADDOCK CASSEROLE 
2 1/2 lbs. haddock
2 c. milk
1 egg yolk
1 sm. onion
1/2 c. flour
1/2 c. butter
Salt and pepper to season

Simmer or scald milk with onion (chopped). In a bowl mix flour and butter together. Add egg yolk and mix until smooth. Add this mixture to the hot milk along with salt and pepper to taste. With a wire whip, mix until thickened and smooth (best done in double boiler).

Cook the fish in a small amount of water until it can be broken apart. Drain. Make alternate layers of fish and sauce in a buttered casserole. Top with buttered bread crumbs or buttered Ritz crackers. Bake 30 minutes at 350 degrees or until bubbly.
