AMERICANA BLUEBERRY MUFFINS 
1/2 c. butter (softened)
1 c. sugar
2 eggs
1 tsp. vanilla
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/2 c. milk
1-2 c. blueberries
1-2 tsp. grated lemon rind
2 tbsp. melted butter
2 tbsp. sugar

Preheat oven to 375 degrees. Cream together butter and sugar until fluffy. Add eggs, one at a time, mixing well. Add vanilla.

In separate bowl, combine the dry ingredients and add them alternately with milk to the batter.

Mash 1/2 cup blueberries and add to the mixture, stirring until just blended. Toss the remaining berries with lemon rind and fold in lightly. Spoon into greased muffin tins. Bake 20-25 minutes. Brush with butter, sprinkle sugar on top.

I do this muffin as a "snickerdoodle" muffin and leave out the blueberries and lemon rind when I don't have blueberries around and it is a fantastic recipe!
