CARROT CASSEROLE 
1 lb. carrots, about 10 carrots, cook mash slightly
2/3 c. sugar
1 tsp. baking powder
2 tbsp. flour
3/4 stick butter, melted and cooled
3 beaten eggs

Mix sugar, baking powder, flour together. Mix butter and eggs. Add all to carrots. Pour into greased casserole. Sprinkle with cinnamon. Bake at 400 degrees for 10 minutes, then at 350 degrees for 25 minutes.
