MICROWAVE OVEN ZUCCHINI
CASSEROLE
 
6 to 8 servings

4 c. thinly sliced zucchini
1/4 c. hot water
3/4 c. shredded cheddar or American cheese
1 egg
1/2 c. dairy sour cream
1 tbsp. flour
3 slices bacon, cooked and crumbled
1/4 c. browned bread crumbs

Place zucchini in 1 1/2 quart casserole with water. Cook, covered, in microwave oven 7 minutes. Drain. Mix cheese, egg, sour cream and flour. Stir into zucchini. Cook in microwave 3 minutes. Stir. Combine bacon and bread crumbs. Sprinkle over casserole. Cook 2 minutes in microwave oven.

Since microwave ovens vary in power, you may need to adjust your cooking time.
