IRISH POTATO CAKE 
1/2 c. butter
2 c. sugar
1 tsp. vanilla
1 tsp. cocoa
1 c. warm mashed potatoes
2 c. flour
2 tsp. baking powder
1/4 tsp. salt
1 tsp. baking soda
1/2 c. milk
1 c. nuts, chopped fine
3 egg whites, beaten light

Cream butter and sugar, add vanilla, cocoa, and potatoes. Add sifted dry ingredients alternately with milk. Fold in nuts and beaten egg whites. Bake in greased 9 inch layer pans at 350 degrees for 35 minutes. Frost with Cooked Cream Filling.

COOKED CREAM FILLING:

1 c. sweet cream or evaporated milk
1 c. sugar
3 egg yolk, beaten
1 tbsp. butter
1 c. chopped nuts
1 box flaked coconut

Cook sweet cream, sugar and beaten egg yolks until thick. Add butter and stir until it melts. Stir in chopped nuts and coconut. Cake may be frozen after it has the filling on it.
