POTATO PANCAKES | |
4 lg. potatoes, about 2 lbs. pared 1/4 c. grated onion (opt.) 2 eggs, slightly beaten 3/4 c. flour Grate potatoes on medium grater, measure 3 cups. In large bowl combine grated potatoes, eggs, onion, flour, salt and pepper. In a large skillet heat oil until hot, not smoking. For each pancake drop two tablespoons. Flatten with spatula. Fry on both sides until golden brown. Drain on paper towel. Serve with butter or sour cream or applesauce or have them just plain. |
