BEST EVER BUTTERSCOTCH PIE 
Pie:

1 c. light brown sugar
4 tbsp. cream
1/4 c. butter
2 egg yolks (save whites for meringue)
4 tbsp. flour
2 cups milk
1 tsp. vanilla
1 pie crust, baked

Place brown sugar, cream and butter in a skillet or heavy pot and brown lightly. Mix together egg yolks, flour and milk; beat well. Add to sugar mixture; cook until thick, stirring constantly over medium heat. Add vanilla. Pour into baked crust. Top with meringue if desired.

Meringue:

2 egg whites
1/2 tsp. cream of tartar
2 tbsp. sugar

Beat egg whites until soft; add cream of tarter. Slowly add sugar, beat until stiff. Spread on top of pie and brown lightly under broiler.
