APPLE CRUMBLE PIE 
1 c. sugar
2 tbsp. all-purpose flour
1 tsp. grated lemon peel
6 c. thinly sliced, peeled cooking apples (2 lb.)
3 tbsp. lemon juice

PASTRY FOR SINGLE-CRUSTED PIE:

1/2 c. all-purpose flour
1/2 tsp. ground cinnamon
1/4 tsp. ground ginger
1/4 c. butter
1/8 tsp. ground mace

Combine 1/2 cup of the sugar, the 2 tablespoons of flour and the lemon peel. Sprinkle apple slices with lemon juice; add sugar mixture and toss to coat. Fill a pastry-lined 9 inch pie plate with apple mixture.

Combine remaining 1/2 cup of sugar, 1/2 cup of flour and the spices. Cut in the butter until crumbly; sprinkle atop apples. Cover edge of pie with foil. Bake in a 375 degree oven for 30 minutes. Remove foil; bake for 30 minutes more or until topping is golden. Serve warm. Makes 8 servings.
