ANISE COOKIES 
2 lg. eggs
1 c. sugar
1 1/4 c. sifted all purpose flour
1 tsp. anise seeds
Anise extract, optional
Lemon zest (optional)
I usually but these in the recipe, 1/4 teaspoon anise extract and 1/2 teaspoon lemon zest

Butter and flour baking sheets. Beat the eggs until frothy. Add the sugar and continue beating, at medium speed, for 30 minutes.

Add the flour and the anise seeds and, if desired drops of anise extract and the lemon zest. Continue to beat 5 more minutes.

Drop the batter from a teaspoon onto the baking sheets; allow 1 inch between cookies. Let stand at least 10 hours at room temperature.

Preheat oven to 350 degrees bake 10 minutes, or until the cookies puff like meringues. Cool on racks. Enjoy!!
