FIESTA MEATLOAF ROLL | |
2 lbs. ground chuck 3/4 cup Italian style bread crumbs 1/2 cup dried chopped onion 2 eggs, beaten 1 1/2 tsp. salt 1 1/2 tsp. black pepper 2 cups shredded Quesadilla cheese 1/2 jar medium salsa Mix together first six ingredients until well blended. Spread meat mixture onto a sheet of wax paper, and shape into a rectangle, approximately 13x6x1/2-inch. Sprinkle top of meatloaf with cheese to within 1-inch of sides. Roll meatloaf into a pinwheel. (Lifting the wax paper and guiding the roll will help.) Seal the edges of the meatloaf together to hold cheese in. Place in baking dish and top with salsa. Bake for 1 hour at 350°F.
