DINNER ROLLS 
1 pkg. yeast
1/4 c. warm water
3/4 c. warm milk
1/4 c. sugar
1/4 c. shortening or butter
3 1/2-4 c. unbleached flour
1 tsp. salt
1 egg

Dissolve yeast in warm water. Add rest of ingredients except flour. Gradually stir in 2 cups of flour. Use electric mixer. Stir in enough remaining flour to make dough easy to handle. Should be soft and pliable but not sticky.

Knead for 5 minutes on floured surface. Place in greased bowl, turn greased side up. Cover with plastic wrap. Place in warm, draft free area and allow to rise until double. 1-1 1/2 hours.

Punch dough down. Divide into 24-30 pieces. Shape however you want. Fantails, clover leafs, knots are easy and attractive.

Place on ungreased baking sheets or cup cake tins according to shape desired. Let rise until double (1/2-1 hour).

Preheat oven to 400 degrees. Turn to 375 degrees before baking. Bake 12-18 minutes or until golden brown.

NOTE: For crispier crust spray rolls with water about 5 minutes before done. The more times sprayed, the crisper the crust.
