"PATTY'S FAMOUS ONE DISH CHICKEN
DINNER"
 
1 whole chicken, cut up
6 eastern potatoes, quartered (don't use baking potatoes as they will fall apart)
2-3 lg. white onions, sliced
4-5 lg. carrots (optional), cut in lg. chunks
1/2 c. vegetable oil or corn oil
Salt & pepper to taste
Lawry's Seasoned Salt to taste
Garlic powder & salt (optional)
Paprika (optional)

Preheat oven to 375 degrees for 10 minutes.

Wash and trim fat from chicken and place skin-side up in a large glass or baking dish. All chicken pieces should lie flat and be able to brown. Put all the cut-up vegetables in a large mixing bowl and pour oil into bowl; toss around so all vegetables get a thin coating of oil. Put all vegetables in dish. Pour a little of the remaining oil over chicken (this step is optional). Now sprinkle your seasonings over everything and bake uncovered for 45 minutes to 1 hour depending on how big you've made this dish (1 hour will do for the above amounts).

You may substitute thick-cut pork chops, cut these must be browned and then covered with foil. Then remove foil at end of cooking time and place under broiler to brown the potatoes, onions and carrots.

This is really quick and easy to make, after you've put it in the oven you can relax as it really doesn't need to be watched. Clean-up is easy, only one dish!! And, of course, it would be even easier if the kids prepared the vegetables in advance for you! If you're really rushed, place in microwave for 20 minutes on high with plastic wrap or cover. Now dish will be done in 1/2 hour.

Since microwave ovens vary in power, you may need to adjust your cooking time.
